What is the shelf life of your cheese?

The fun part about cheese is that as long as it is still fully sealed in the packaging it will basically keep aging. This is only true for drier cheeses like our cheddars. The colbys have a max shelf life of 8 months because they are higher moisture. They don’t necessarily spoil but they will not have optimum flavor.

What does the date on your yogurt stand for?

The date on all of our yogurt containers is the sell by date. We do not sell any of our yogurt past that date. This does not mean that the yogurt is expired. You can still enjoy our yogurt 1-2 weeks past the sell by date, it just may have more of a tangy flavor.

My salami has mold, is it okay to eat?

Our salamis are made in the traditional old-world way, meaning they are made with cultures just like our cheese and are hung in an aging room (known as a bloom chamber) to age and develop flavor. This aging room is where mold may grow on the outside of the salami. This is safe to eat mold and actually will enhance and add flavor to the meat. If you do not like the idea of eating the mold, you can wipe it down with white vinegar before slicing.

How do you slice the salami?

Salami needs to be kept refrigerated until ready to consume. Before slicing let sit out for about an hour and come to room temperature. This will make it easier for slicing and you will get much more flavor from the fat. Use a sharp knife to slice paper thin pieces. The salami will melt in your mouth. If you slice this hard salami too thick, it will be hard to chew.
